Here is a simple tutorial on how to individually and manually transfer your mp3 files to your iDevices, avoid syncing all your files.
Click on your device, in the summary page, check ‘Manually manage music and video’ and then click on the ‘Apply’ button. Confirm to apply the settings. Watch the simple video tutorial I’ve created.
To transfer mp3 to your device, just drag and drop the mp3 to the ‘Music’ list.

I have an iphone 3g but it’s hard to connect to the i-tune and also add video or mp3 to my iphone. One more thing my phone has trouble with safari .
